PASTA

Ingredients

1. Pasta Penne, boiled 2 cups

2. Boneless chicken grilled and shredded 250 grams

3. Salt to taste

4. Crushed black peppercorns to taste

5. Parmesan cheese grated to sprinkle

6. Fresh parsley sprig for garnishing

Sofrito

7. Tomatoes quartered 3 medium

8. Red capsicum roughly chopped 1 medium

Spring onion 1

9. Garlic cloves 3

10. Fresh parsley ¼ cup

11. Olive oil ¼ cup

Method

Step 1

To make sofrito, finely chop together tomatoes, bell pepper, spring onion, garlic and parsley with olive oil in a food processor.

Step 2

Heat a non-stick pan. Add the chopped ingredients and sauté till the oil separates.

Step 3

Add chicken, pasta, salt and crushed peppercorns and mix well.

Step 4

Sprinkle parmesan cheese on top and serve hot garnished with parsley sprig.
