Photos by: Dianne Carroll Burdick Goat Cheese Dip 10 – 12 oz. goat cheese (plain) 1 head of garlic, peel each clove 1 medium red onion, thinly sliced 1 TBSP brown sugar 2 TBSP olive oil 1 TBSP balsamic vinegar 2 -3 TBSP fresh basil leaves, chopped 1.Bake garlic in olive oil for 25 minutes at 350 in a glass baking dish 2.Sauté onions until transparent and soft; add brown sugar 3.In dish in which garlic was baked, add onion mixture and goat cheese; bake 20 minutes at 350 4.Remove dish from oven, stir gently to blend; add balsamic vinegar 5.Top with fresh chopped basil 6.Serve warm or cooled with crostinis or crackers Flavor19
