Taveuni is a volcanic island rich with soil ideal for growing nutritious organic food. This salad is inspired by the healthfulness of living close to the land and sea.

We can grow or purchase most of these ingredients or smilar varieties at local farmers markets and grocery stores at home. Cucumbers are called Bilimbi in Taveuni. Spinach, tomatoes, carrots, pumpkin, cabbage, taro, peppercorns coffee, kava, vanilla. tropical fruits such as mango, cherry quava and pineapple, coconut and herbs like basil and tarragon are all grown on the island. Bees are kept for their honey and to pollinate edible flowers and plants. Gardens surround most homes and resorts. Taro plantings are also found in small clearings in the tropical rainforest.

Salad Ingredients

1 bunch of spinach

1 persian cucmber

1 mango

1 taro root

6 cherry tomatoes

6 basil leaves

1/4 cup shaved coconut meat

Dressing Ingredients

1 teaspoon coconut oil

1 tablespoon honey

1 tablespoon white rice vinegar

12 peppercorns

Wash all vegetables and fruit and prepare as follows: Peel the taro and mango. Grate the taro, mango and carrots with a large grater. Slice the cucumbers and halve the cherry tomatoes. Set aside. Crisp the coconut flakes and grated taro in a few drops of cocount oil on a low heat until brown. Set aside.
