INGRIDIENTS

Filling

1 mid-size Onion (chopped)

1 mid-size Capsicum/ bell pepper (chopped)

2 mid-size carrots (chopped)

6-7 Beans (chopped)

¼ cup peas

¼ cup sweet corn

3 Tbsp. Pasta & Pizza sauce

½ tsp. sugar

½ tsp. black pepper

¼ tsp. dried oregano/mixed herbs

¼ tsp. chilli flakes

1 tsp. Salt

1 Tbsp. vinegar

2 tsp. garlic powder

3 Tbsp. ketchup

50 gms/ 1 cup mozzarella cheese (Cold and Grated)

½ Cup Drinking water

1 Tbsp. oil

Dough

2 cup all-purpose flour (Maida)

1 tsp. salt

2 tsp. baking powder

5 tbsp. oil (Vegetable or olive oil)

½ cup Cold Water

Procedure

For the filling

Take a pan, a oil and all the vegetables and let them cook for 5mins. Then add water, pizza pasta sauce, salt, herbs, pepper, chilli flakes and tomato ketchep, vinegar, garlic powder and stir the mixture and cook for next 3-4mins till the mixture simmers and the water dries out.

Let the mixture rest for atleast 1/2 hour and then add grated cheese.

For the Dough

Take all purpose flour in a bowl, add salt, baking powder, oil and mix thoroughly until the mixture looks like bread crums. Then start adding water in batches as needed and till a tight dough. Then let it rest of an hour.

Pizza Pockets

Take a dough and roll a roti not too thick, and with the help of a cutter cut it in rectangular shapes.

Then take one rectangular piece and add some mixture and put another rectangle piece on the top and seal the sides with the help of water, so that it doesn't open up while frying.

Heat the oil on medium flame and fry these pizza pockets until they turn golden brown.

Serve it with ketchup.
