Boil or roast sweet potato. Once tender remove from heat and mash. Add sweet potato, eggs, vanilla extract, tapioca flour, baking powder, cinnamon and salt into a blender, cover and blend until smooth. Transfer mix back into a mixing bowl and set aside. Melt 2 teaspoons of vegan butter in skillet over medium heat. Pour small amounts of pancake batter into the skillet, cook 2-3 minutes on each side or until golden brown. Repeat steps with remaining batter. Serve hot with more vegan butter and raw honey (optional).
