RESTAURANT 3.0 showcasing the
future of foodservice in S’pore
Given the rapid development in technology, new
applications, solutions and business models are now
possible to bring about a whole new level of dining
experience, and this is what RESTAURANT 3.0
promises to unveil. Presented by Enterprise Singapore,
in partnership with Workforce Singapore, Restaurant Association of Singapore and Singapore Productivity
Centre, at HotelAsia (part of FHA2018), booth H603-
04 , Level 6, Suntec Singapore, RESTAURANT 3.0 is
showcasing the future of foodservice. Tong Shuh Lan
(right), director, Food, Enterprise Singapore, explains
more to the Show Daily.
Why did Enterprise Singapore
create RESTAURANT 3.0? Do
you see the ideas and workflow
solutions being presented in RES-
TAURANT 3.0 becoming part of
the foodservice scene in the near
future?
Tong Shuh Lan: RESTAURANT
3.0, developed by Enterprise
Singapore, Workforce Singapore,
Singapore Productivity Centre
and Restaurant Association of
Singapore, is a showcase on how a
Restaurant of the Future (ROTF)
could look like.
Restaurants are constantly
striving to provide fresher ingre-
dients, tastier food and better
service to capture the interest of
increasingly sophisticated consum-
ers. This showcase aims to inspire
restaurants of all sizes to explore
and adopt different types of tech- of-house and back-of-house.
RESTAURANT 3.0 also offers
modular solutions which allow
businesses to design cost-effective
systems as they scale up their
ope rations. For example, restau-
rants can grow their own produce
on-site and allow diners to select
their preferred herbs as part of the
dining experience.
nology to deliver novel customer
experiences in an ope rationally
efficient manner. Solutions avail-
able at RESTAURANT 3.0 span
both back-of-house and front-of
house, including bite-sized auto-
mation equipment, RFID-ena-
bled vending machines, robotics
and urban farming technology.
What kind of showcase will visi-
tors to RESTAURANT 3.0 be in
for?
Tong: At the showcase, visitors
will be able to experience first-
hand how restaurants could adopt
technologies such as order and
payment systems as well as robotic
service assistants to improve their
workflow and operational pro-
cesses such as the consistency of
food preparation. The exhibit is
divided into two sections, front-
What about human resources?
Would adopting more technol-
ogies in food production not affect
employment? Are you also looking
into balancing both human and
technology resources?
Tong: The foodservice industry in
Singapore employs about 160,000
workers and has traditionally been
reliant on manual labour. The
drive to transform the sector and
increase productivity led to the
launch of the foodservice Industry
Transformation Map by the then

prise Singapore, with industry and
association partners.
The adoption of technology
and other innovative solutions
can help businesses overcome
manpower shortages and open up
opportunities for business growth.
Technology solutions such as ro-
botics or automation can handle
repetitive processes better, leav-
ing employees to focus on other
higher value or skilled activities
such as menu engineering, creat-
ing new product range to meet
consumer tastes and preferences,
enhancing customer service and
other areas that can improve the
business’ bottom line. Technology
is not meant to displace or replace
humans but to work alongside

sociation of Singapore (for the
food industry) to level up busi-
nesses’ capabilities and facilitate
collaborations among businesses
with complementary capabilities
