Born in Miami and raised in Puerto Rico, Karla understands firsthand how food connects to identity. “I grew up surrounded by incredible food,” she says. “But it wasn’t until my early twenties that I realized the importance of balance, like learning how to cook, eat mindfully, and stay connected to my roots.”

Healthy Swaps with Soul

Karla’s plant-based approach isn’t about restriction—it’s about reinvention. For holiday favorites, she suggests small changes that make a big difference:

Pastelón with lentils and walnuts instead of ground beef for a hearty, flavorful texture.

Vegan coquito made with oat milk, coconut cream, and a touch of maple syrup.

Arroz con gandules cooked with olive oil and brown rice for added fiber and better blood sugar control.

“Our gut is like a muscle,” Karla explains. “It needs to be trained. Introduce fiber gradually, stay hydrated, and prepare beans properly. Over time, your digestion adapts and you begin to experience real benefits like better energy, lower cholesterol, and more stable blood sugar.”

The Power of Representation

As a monthly local TV guest expert Karla uses every platform to challenge myths about plant-based eating in the Latin community, especially around protein and soy. “Plant-based doesn’t mean bland or boring,” she says. “It’s vibrant, flavorful, and deeply rooted in our heritage. Many of our ancestral dishes were naturally plant-based long before it was trendy.”

Her mission extends beyond recipes. Through her 90-Day Plant-Based Nutrition Program and corporate wellness workshops, she helps families and professionals build long-term, sustainable habits. “Health isn’t about perfection,” she adds. “It’s about consistency or doing your best most of the time.”

A Holiday Season of Wellness and Connection

This holiday season, Karla encourages everyone to bring health and heritage together at the table. “Food is meant to be shared,” she says. “When we cook together, we teach the next generation how to celebrate culture and care for their well-being. That’s the legacy we should be passing on.”
