To no surprise, pasta is the heart of many Italian traditions. When it comes to pasta, Italy clearly sets itself up as the winner for many reasons.

focus on fresh, using seasonal and locally sourced ingredients.

use durum wheat semolina which is high in both protein and gluten.

have traditional techniques to making the pasta that date back centuries.

pasta is al dente in texture thus enabling it to be healthier and satisfying.

focus on the less is more ingredient principle.

love the variety of pasta shapes and brilliantly pair the shape to the right sauce pasta ratio.

When in Italy, I pretty much consumed pasta daily. From the Lemon Sauce Fettuccini in Amalfi Coast to the Tomato Basil Spaghetti and Pesto Sauce Risotto in Rome to the Carbonaro Pasta in Milan, I truly experienced why Italians “do it best” when it comes to Pasta.
