Spicy Citrus Turkey Rub:

Ingredients:

2 tablespoons paprika

1 tablespoon chili powder

1 tablespoon orange zest

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to your spice preference)

1 tablespoon brown sugar

2 teaspoons salt

1 teaspoon black pepper

Directions:

Mix the ingredients for your chosen rub together in a bowl.

Make sure your turkey is clean and dry. If you prefer, you can also brush it with olive oil to help the rub stick better.

Rub the seasoning mix all over the turkey, including under the skin and inside the cavity, to ensure even flavor distribution.

Allow the turkey to sit in the refrigerator for at least an hour to let the flavors infuse, but overnight is even better for more intense flavor.

Roast the turkey according to your favorite recipe or method.

Rosemary and Maple Glaze

Ingredients:

1/2 cup pure maple syrup

2 tablespoons fresh rosemary leaves, finely chopped

2 tablespoons Dijon mustard

2 cloves garlic, minced

1 tablespoon olive oil

In a small saucepan, heat the olive oil over medium heat.

Add the minced garlic and chopped rosemary to the saucepan. Sauté for 1-2 minutes, or until the garlic becomes fragrant and the rosemary begins to release its aroma.

Stir in the Dijon mustard and cook for another minute, allowing the flavors to meld together.

Reduce the heat to low and add the maple syrup to the saucepan. Stir well to combine all the ingredients.

Simmer the mixture over low heat for about 5-7 minutes, or until the glaze thickens slightly. Make sure to stir occasionally to prevent burning.

Taste the glaze and season with salt and pepper as needed. The amount of salt and pepper can vary depending on your personal preference.

Remove the saucepan from the heat and let the glaze cool for a few minutes. It will thicken further as it cools.

Once the glaze has reached your desired consistency, you can use it to brush over your roasted turkey during the last 10-15 minutes of cooking. This will allow the glaze to caramelize and create a flavorful, slightly sweet, and aromatic crust.
