If the logistics, science, and art of wine making weren’t enough to tackle, Utah adds its own punch with its ever-changing alcohol laws. Bringing this up, MacKay knowingly smirked and rattled off a few of the recent changes, exceptions, and exemptions. He shared that “in this little space, there are three different state licenses.” But jumping through all of these hoops didn’t deter him as he sentimentally says, “Park City is a unique place…I feel so grateful to grow up here, and come back here to have a
business [with] a community rallying around us…”
Returning the community support, MacKay partners with local award-winning cheesemaker Fernando Chavez from Gold Creek Farms, butcher Philip Grubs from Beltex Meats, and pastry chef Bobbye Sandman from Honey B Cakes, pairing wines with a charcuterie board or dessert tray to elevate the wine tasting experience. Local candle maker Lindsay Arnold uses her skills to up-cycle discarded
bottles to create one-of-a-kind candles. And you might be lucky enough to happen in on a night where local musicians play near the wine tanks in the back where a small portion of the wine blending still occurs.
Park City is a treasure of a town and Old Town Cellars is a unique gem along the storied streets. Walk through the doors and back in time; a time when people meet and talk as they enjoy the simple pleasures of life: wine, food, and conversation.
