Place all fresh, defrosted chicken meat on large size cutting board covered with paper towels.

Season starting with Mediterranean sea salt, followed by black pepper, cayenne pepper, cumin, garlic powder and smoked paprika. Turn over all chicken meat and repeat.

Ideally this recipe is great to season the night before. I have also seasoned 6 hours before and tastes delicious so depends on your schedule.

In a large size Ziploc bag, add the canola oil, Walkerswood Jerk seasoning and marinade.

Add all the chicken to the Ziploc and close it. Then massage the meat so every piece of chicken is brown and covered with the seasonings.

Place into the fridge.

Pre-heat oven to 385 degrees

Line a cooking sheet with parchment paper and place the chicken on the sheet.

Cover the entire sheet over all sides and under with Reynolds Wrap which creates a “smoker effect” in the oven

Cook for 45 minutes

Remove the Reynolds Wrap off the chicken and increase the temperature to 400 degrees

Place chicken back into the oven for 15 minutes so the skin gets crispy.

For the mixed salad greens with edible flowers, combine together and set aside

In a separate small bowl combine ¼ cup unfiltered olive oil, 2 tablespoons of balsamic vinegar, salt and pepper to taste and juice from ½ a lemon with a whisk. Yes, you can substitute a bottled dressing but why when this is so easy.

Take chicken out of the oven and serve with your mixed greens edible flowers salad. They complement each other with the heat of the jerk and the acidity of the salad dressing.

Suggested beverage: Brut Rosé or a really good red blend wine (The Prisoner)

Jerk Chicken Wings and Mixed Green Edible Flowers Salad

Love the heat of jerk and with beautiful mixed salad greens INCLUDING edible flowers you can source from your local farmers market that is beautiful to plate. This is an easy meal to make but no one will know it with the flavor.

Ingredients

1.5 oz of Walkerswood Jamaican Jerk Seasoning (hot and spicy)

2 lb of organic chicken party wings (or substitute with chicken thighs)

Mediterranean Sea Salt

Cracked black pepper

Ground Cayenne Pepper

Ground Cumin

Ground Garlic Powder

Smoked Paprika

¼ cup Caribbean Marinade Dressing (in grocery marinade section I use Kroger brand)

¼ cup of Canola Oil
