4 cups pumpkin or carrots, finely grated
2 1/3 cups milk
1 tsp cardamom seeds, crushed
1 tbsp sultanas
2 tbsp ghee (or unsalted butter)
½ cup sugar
3 tbsp flaked almonds or
pistachio slivers, lightly toasted

Instructions
1. Combine grated pumpkin with milk, cardamom,
and sultanas in a large non-stick frying pan.
2. Bring to a simmer over low-medium heat,
stirring occasionally.
3. Cook until pumpkin is tender and almost all the liquid
has evaporated (mixture thickens).
4. Add ghee, sugar, and nuts and stir well.
5. Spread mixture out evenly in a shallow pan. Let cool.
6. When cool, cut into 1-inch squares and they’re
ready to share.
