In the last years the beer market have been dominated by large factories, leading to a growth in the craft beer sector. During that change beer consumers became more demanding and started searching for beers with new flavors, characteristics, and aromas. It is important to

emphasize that moderate consumption of beer has a beneficial effect on the human immune system, which corresponds to an average of 330 mL for women and 660 mL for men. In a recent study published in the Journal of Food Chemistry in January 2017, a group of researchers from Switzerland developed a craft beer enriched with Goji Berry (Lycium barbarum), which is a plant of the Solanacea family found in

China and regions of the Himalayas. The Goji Berry is at the top of the 8000 herbal and Chinese healing food chart. Several studies in China extol its broad health benefits, citing from its renewal of vitality and longevity to the strengthening and restoration of important organs like eyes, liver and kidneys. At the end of the study the researchers obtained a beer with high antioxidant activity, high content of bioactive compounds and good sensory characteristics. Good point for the craft beer segment.

In the week of May 22 to 25 the research group in fermentations (NEFER), organized the first UFLA craft beer workshop in Minas Gerais. The workshop aimed both beginners and advance brewers.

The workshop was tought by Dr. João Batista de Almeida e Silva, who is a professor from the University of São Paulo in Lorena, and has been working with alcoholic fermented drinks, emphasizing in the production of beer.

The demand for craft beers has increased in the last years and moved to the alcoholic beverages sector. This indicates that the consumer are searching for new sensory experiences.

Due to this, craft beers are being produced with high quality raw materials and various additives, together it allows them to change and produce different flavors in beers.
