While navigating a kitchen with just a single burner and one-pan oven presents a daily challenge , Pajak uses practiced resourcefulness and the highest quality of ingredients to execute a masterful tasting menu . An inspired creation and ode to San Sebastian ' s pintxo bars , mushroom pintxo deluxo exudes rich flavours of black truffle , elevated by an aioli made from house-ground and dehydrated mushroom stems ( pg 27 ).
