CURRY SCALLOPS

Spicy Coconut Curry Scallops are luxuriously flavorful and aromatic . The sweetness of the scallops combined with spices and rich and creamy curry , make this irresistible . Casual or Classy is up to you , this dish is perfect for both ! Serve with jasmine rice and warm naan to complete .
16 dry sea scallops , side muscle removed seasoned with salt , paprika ( hot or smoked ), then drizzled with oil
1 Tbsp . neutral oil 1 / 2 small onion , small diced 2-3 cloves garlic , minced 1 Tbsp . ginger , grated 2 Tbsp . lime juice 1 Tbsp . Indian curry paste , hot or mild 1 cup coconut milk 1 / 4 Cup cilantro , minced 4 pieces store-bought naan , toasted salt and pepper to taste red pepper flakes , optional
1 . Cook the scallops . Heat the oil in a wide pot over medium-high . Once very hot , sear the scallops for 1 minute on each side , remove from pan , set aside .
2 . In the same pot , cook the onions for 1 minute . Then add garlic and ginger and cook until fragrant .
3 . Add the curry paste , cook in the pan for 1 minute before adding lime juice and coconut milk .
4 . Simmer the sauce for 2 minutes , then return the scallops to the pan to cook for 1-2 minutes , and season to taste .
5 . Gently place the scallops in the broth in an even layer and reduce heat to low . Cover and simmer for 5-6 minutes .
6 . Turn off the heat and leave the scallops in the pot with the lid on for 1-2 minutes .
7 . Serve with coconut rice , garnish with cilantro and toasted naan .
Scallops are available in most grocery stores , either fresh or frozen , and are typically sold by the pound . You ' ll find two main types : sea scallops and bay scallops . Sea scallops are considerably larger than bay scallops and are labeled by how many scallops are in a pound — such as U10 , U20 , or U30 . The smaller the number , the larger the scallop . Bay scallops , on the other hand , are much smaller , with around 70 scallops per pound .
