6 mouthwatering ways to serve salmon .

I ’ LL NEVER GROW TIRED OF feeling the raw power of a king salmon at the end of my fishing line . When my rod is bent to the cork , and the fish is fighting with all its strength , the lactic acid buildup in my arms hits overdrive and it ’ s all I can do to direct the fish into the net . In the world of salmon fishing , that ’ s the good stuff . When I return home from a fishing trip the bright orange , Omega 3-rich salm- on fillets is just as good .
Having been an ardent salmon fisherman for the better part of 30 years I ’ ve made it my own personal mission to prepare salmon for my family in ways that they don ’ t grow tired of eating fish . Admittedly , it ’ s an uphill battle . There are times when my two kids will roll their eyes when salmon is on the menu . In an effort to be creative , I ’ ve experimented with countless recipes . Personally , I ’ ve enjoyed them all and the one category that my family never tires of is appetizers . I ’ ve compiled a list of my favorites with the hope that you ’ ll find a couple to your liking .
Even if you ’ re not a salmon angler , there ’ s no shortage of it in the Pacific Northwest . Every grocery store sells it , as does the iconic Pike Place Market in Seattle . However you bring salmon home , I encourage you to try these appetizers . If my salmon-wary kids will eat them , I ’ m sure they ’ ll be a hit with your family and friends . pat hoglund photo
Bacon-Wrapped Salmon
This is a great appetizer that I modeled after one of my favorite hors d ’ oeuvres : bacon-wrapped scallops . I added a twist and marinated the salmon in olive oil and herbs . You can swap out the salmon with halibut , too . But you ’ ll enjoy the simplicity of the recipe at the same time the bacon complements the salmon nicely .
Cut salmon into 1 ½-inch pieces . Combine chopped garlic , olive oil , rosemary into small bowl . Individually wrap each piece of salmon with one piece of bacon . Secure with toothpick . With a food brush , baste salmon with olive oil , garlic and herbs . Lightly salt . Place salmon pieces on an outdoor grill and slow cook until bacon is cooked . Serve with a cold beer and enjoy .
1 lb . of salmon fillet 1 lb . of pepper bacon ¼ cup of olive oil 3 garlic gloves , peeled and chopped 1 tablespoon fresh rosemary 1 teaspoon of Kosher salt 12 toothpicks
