“We maintain a classical approach in cellar techniques and the method
is simplistic and natural and respectful of the grape and vineyard to
ensure the longevity of the farm for future generation cellarmasters,”
says Takuan von Arnim Cellarmaster Haute Cabriére
STELLENBOSCH VINEYARDS
Oozing ‘so-fizz-tication’ whilst remaining hip and
trendy, the versatility of MCC’s is best shown in the
way the drink has adapted over time. “Hectic lifestyles
makes consumers tend to want to spoil themselves
and have quality rather than quantity” says Uschi
Van Zweel from Haute Cabrière, one of the country’s
leading producers who specialises in Chardonnay and
Pinot Noir grapes only and follows a philosophy of
respecting the vineyard and cellar. “Wine has become
a lifestyle and is no longer seen as a special occasion
beverage and it is our aim to inspire consumers to
see MCC’s in the same way, especially in the summer
months”.
“This is why we refer to our wine makers as wine
growers” says Takuan von Arnim, the Cellarmaster
who follows in his father’s footsteps, producing
the Chardonnay and MCC’s that Haute Cabriere is
renowned for. “Technically keeping your eye on the
brand and upholding the cellarmaster’s tradition is
what produces the Haute Cabriere quality. However
each new year offers a blank canvas to the cellarmaster,
understanding and perfecting your technique,
exploring what other winemakers are doing and
new technologies is key. It is within the complete
understanding of the constraints of the craft, that you
find your stylistic freedom” comments Takuan.
It certainly lends itself to elegance and leaner styles
with fuller body, like their world famous Pierre Jourdan
Blanc de Blanc which is 100% Chardonnay. Fresh with
very dainty strings of pearl, the R139 per bottle is only
available on the Franschhoek estate whilst the R89
per bottle Haute Cabriere Chardonnay Pinot Noir is
available at most retail outlets.
For a late brunch try Nederburg Première Cuvée Brut
– a sparkling wine that retails for around R70 a bottle
and is the perfect partner to fresh oysters, seasonal
fruits, omelettes and eggs Benedict.
