The art of seasoning: when to use what

Not all salt belongs in the same shaker. The variety you reach for and the moment you use it can completely change the flavour, texture and finish of a dish. And great seasoning is as much about timing as it is about taste.
For Everyday Cooking: Table Salt & Kosher Salt
Table salt is reliable, consistent and cost-effective, ideal for baking, soups, stocks and everyday seasoning throughout the cooking process. Kosher salt, with its larger, lighter crystals, is the professional chef’ s go-to, it distributes more evenly, clings well to proteins and gives you more control over how heavily you season. Season as you go rather than all at once, building flavour layer by layer.
For Finishing:
Flaky Salt, Fleur De Sel & Himalayan Salt
Finishing salts are added at the very end, right before serving, or even at the table. Flaky sea salts and Fleur de sel offer delicate crunch and clean bursts of salinity that elevate everything from grilled meat to a warm chocolate brownie. Himalayan pink salt brings mild minerality and colour. These salts are not about making food salty; they are about adding a final layer of texture and contrast.
For Bold Flavour:
Smoked, Infused & Seasoned Salts
When salt becomes part seasoning, part flavour enhancer, the results are memorable. Smoked salts add deep, woodfired character to roasted vegetables, potatoes and grilled meats. Infused salts such as truffle, garlic, citrus, and herb instantly enhance simple dishes with very little effort. These salts work beautifully on chips, popcorn, eggs and quick weeknight meals.
For Texture And Control: Coarse vs Fine
Grain size matters more than many home cooks realise. Fine salt dissolves quickly and seasons evenly throughout – perfect for doughs, batters and sauces. Coarse salt adds visual appeal and releases flavour more slowly. Large crystals are excellent in a grinder or for adding a dramatic flourish over a crust, but less welcome as a finishing touch where they could overwhelm a mouthful.
