A vibrant spring mocktail bursting with berries, citrus and delicate floral notes.
INGREDIENTS Berry Base
• 750 ml PURE JOY CRANBERRY Fruit Juice
• 120 ml freshly squeezed lemon juice
• 2 tbsp fresh lime juice
• 2 tbsp honey or simple syrup( adjust to taste)
• 1 tsp finely grated lemon zest
To Finish
• 500 ml chilled sparkling water or lemonade( for alcoholic option SPARKLING WINE)
• Ice cubes
Garnish
• Fresh strawberries, halved
• Fresh blueberries
• Lemon wheels
• Mint sprigs
• Edible flowers( pansies, violas or nasturtiums)
• Thin ribbons of lemon zest
METHOD 1. In a large jug, combine the strawberry & blueberry juice, lemon juice, lime juice, honey and lemon zest.
2. Stir until the honey has dissolved.
3. Refrigerate for at least 30 minutes to chill and allow the citrus flavours to develop.
4. Fill tall glasses with plenty of ice.
5. Add a few fresh blueberries and strawberry halves to each glass.
6. Pour the cranberry mixture three-quarters full.
7. Top with sparkling water or lemonade and stir gently.
8. Finish with mint, edible flowers and a lemon wheel.
