Did You Know?
Eton mess is meant to be imperfect, that is part of its charm. For the best result, use a mix of crisp & slightly chewy meringue, gently fold through softly whipped cream & add fresh, ripe fruit just before serving so everything stays light, textured & not overly soggy.
Essential Fact
Use fresh lemon or lime juice. Bottled versions can taste flat & slightly bitter.
