By Jandré Coetzee-Blom @ deliciously _ lia
Serves: 4
INGREDIENTS
• ●1 slice Rooibos & Rye Bread, soaked in 150ml milk
• ●1 tablespoon extra-virgin olive oil
• ●1 garlic clove, finely chopped
• ●500g lean beef mince
• ●2 red onions, chopped
• ●2 carrots, finely chopped
• ●1 teaspoon turmeric
• ●1 teaspoon cinnamon
• ●2 teaspoons medium curry powder
• ●1 teaspoon ground coriander
• ●1 teaspoon garlic powder
• ●4 eggs, beaten
• ●bay leaves, for added flavour
• ●fluffy jasmine rice or couscous, to serve
• ●salt, to taste
METHOD
1. Preheat the oven to 180 ° C. 2. Soak the bread in the milk and set aside.
3. In a large ovenproof casserole, heat the olive oil over medium heat. Add the chopped garlic and cook until fragrant.
4. Stir in the beef mince, onions, carrots, turmeric, cinnamon, curry powder, garlic powder, and ground coriander. Cook over a low to medium heat until the beef is browned and aromatic.
5. Remove the soaked bread from the milk and mix it into the beef mixture, ensuring it breaks down completely. Pour in any remaining milk and simmer for 2-5 minutes.
6. Remove the casserole from the heat and pour the beaten eggs evenly over the top. Add a few bay leaves and the salt for added depth of flavour.
7. Bake for 25-35 minutes, or until the top is golden brown and set.
8. Serve warm with jasmine rice or couscous, then enjoy this comforting South African classic!
