Essential Flavours Volume 5 I Issue 2 | Page 53

INDIAN FOOD food no longer needs validation by comparison. It stands complete.
As this movement gathers momentum, the future looks thrillingly plural. There will be streetside counters and serene tasting rooms, ancestral recipes and bold experiments, comfort and challenge on the same plate. Together, they signal a cuisine not reinventing itself but finally being fully seen, region by region, flavour by flavour, as one of the world’ s most dynamic.
Coastal Konkan curries are vibrant, coconut-based dishes from India’ s west coast, featuring bold seafood( fish, prawns, crab) or chicken, tangy kokum or tamarind, and rich spices such as red chilli, coriander, and poppy seeds, often served with rice or fluffy puris.
Key ingredients include fresh or dried coconut, Byadgi chillies for colour, ginger, garlic and regional masalas creating spicy, aromatic gravies with unique textures. Popular examples include fiery Kombdi Vade( chicken), tangy fish curries and rich prawn or crab curries.
Chef’ s Notes:
• Coconut oil is essential- don’ t substitute.
• Avoid overcooking prawns; they become rubbery quickly.
• Kashmiri chillies give colour without too much heat; add a hotter chilli if needed.
• For a Goan-Konkani crossover, add 1 – 2 cloves and a small piece of cinnamon to the masala.
Konkan-Style Prawn Curry
Serves: 4
INGREDIENTS
For the prawns:
• 500g medium prawns( shells removed, deveined; tails optional)
• ½ teaspoon turmeric powder
• ½ teaspoon salt
• juice of ½ lime, optional
For the curry masala:
• ¾ cup freshly grated coconut( or unsweetened desiccated coconut, lightly soaked)
• 6 – 8 dried red Kashmiri chillies( adjust heat to taste)
• 1 teaspoon coriander seeds
• ½ teaspoon cumin seeds
• 6 – 8 black peppercorns
• 1 teaspoon tamarind pulp( or a marble-sized piece, soaked)
• water, as needed for grinding
For the curry:
• 2 tablespoons coconut oil( important for authentic flavour)
• 1 sprig curry leaves
• 1 medium onion, finely chopped
• 1 teaspoon ginger-garlic paste
• ½ teaspoon turmeric powder,
• salt, to taste
• 1 – 1¼ cups water( adjust for desired consistency)
METHOD
1. Rinse the prawns and pat dry. Toss with turmeric, salt and lime juice and set aside for 10 – 15 minutes.
2. Make the Konkan masala by grinding the coconut, dried red chillies, coriander seeds, cumin, peppercorns, and tamarind with a little water. Blend to a smooth, thick paste. Set aside.
3. Heat coconut oil in a deep pan over medium heat. Add curry leaves and let them splutter.
4. Add the chopped onion and sauté until soft and translucent( do not brown). Stir in gingergarlic paste and cook for 30 – 40 seconds until aromatic. Add turmeric powder and mix well.
5. Add the ground coconut masala to the pan and cook for 3 – 5 minutes, stirring frequently, until the oil begins to separate slightly and the raw coconut aroma disappears.
6. Add water to reach a mediumthin curry consistency. Bring to a gentle boil and simmer for 5 – 7 minutes. Season with salt.
7. Add the marinated prawns and simmer gently for 3 – 5 minutes only, until the prawns turn pink and are just cooked. Taste and adjust salt or tamarind.
8. Turn off the heat and let the curry rest for 5 minutes. The flavour improves as it settles.
9. Serve hot with steamed rice.
