RYE REVIVAL
RUSTIC RYE & HONEY LOAF
INGREDIENTS
• 2 cups rye flour
• 1 cup bread flour
• 1½ teaspoons salt
• 1 teaspoon instant yeast
• 1 tablespoon honey
• 1½ cups warm water
METHOD
1. In a large bowl, combine the rye flour, bread flour, salt and yeast. Stir in the honey and warm water, mixing until a soft, sticky dough forms.
2. Turn it out onto a lightly floured surface and knead gently, just enough to bring it together into a cohesive ball. The dough will remain slightly tacky, which is exactly what you want.
3. Place the dough into a clean, lightly oiled bowl, cover with a kitchen cloth and leave it somewhere warm and draught-free for about two hours, or until it has doubled in size.
4. Once risen, shape the dough into a loaf and allow it to rest again for about 30 minutes while you preheat the oven to 200 ° C.
5. Bake for 35 to 40 minutes, until the crust is deep in colour and sounds hollow when tapped. Let the loaf cool slightly before slicing.
6. Delicious served warm with butter and a good, sharp cheese. did you know?
Rye isn’ t gluten-free. Despite its lower gluten content compared to wheat, rye still contains gluten & isn’ t safe for those with coeliac disease or with gluten intolerance. For a gluten-free option, swap the rye & bread flour for a 50 / 50 blend of buckwheat flour & a good gluten-free bread mix & add 1 teaspoon of psyllium husk to mimic rye’ s natural stickiness & structure.
