IN THE KITCHEN
Understanding your oven’ s racks is one of those small kitchen details that quietly enhance the way you cook. Each level heats a little differently. This means that choosing the right rack can improve browning, create crispier bases, and ensure more even cooking without needing to substitute any ingredients.
Use this quick guide to intentionally position your dishes and maximise the outcome of every bake and roast.
Top Rack
Closest to the top heating element. Great for:
• Broiling or grilling Bubbling gratins
• Quick surface browning
• Finishing dishes that need colour
Think cheesy toppings, salmon that requires a final caramelised edge, or anything that benefits from high, direct heat.
Middle Rack
The oven’ s most even zone. Best for:
• Baking
• Roasting
• Casseroles
• Anything you want evenly cooked through
This is the rack you use by default if a recipe does not specify, as it provides a consistent temperature without scorching.
Bottom Rack
Closest to the bottom heat source. Ideal for:
• Pizza
• Crusty breads
• Pastries with caramelised bases
• Anything needing a crisp, browned bottom
Think focaccia, sourdough, pies, flatbreads.
