PORK AND WINE PAIRING
PINOTAGE AND PORK:
A harmony of heritage, flavour and versatility
By The Pinotage Association
When it comes to wine and food, few pairings are as gratifying and as inviting to endless exploration as pork and Pinotage.
Pork offers a wide range of flavours and textures, from lean and delicate to rich and hearty. Pinotage, South Africa’ s flagship grape, complements that versatility with reds of depth, lighter lifestyle styles, elegant Cape Blends, and bright rosés. Together, they create a pairing that’ s both culturally rooted and full of sensory harmony.
The Legacy of Pinotage
Pinotage was developed in 1925 at Stellenbosch University when
Professor Abraham Izak Perold crossed Pinot Noir with Cinsault( then known as Hermitage). The result was South Africa’ s first indigenous varietal, combining Pinot’ s finesse with Cinsault’ s resilience. Today, Pinotage enjoys international recognition for its vibrant fruit, firm structure, and impressive versatility.
Pork, like Pinotage, has a longstanding tradition of being shared at family tables. Both carry heritage while offering new possibilities. When paired, they celebrate not just flavour, but history – Pinotage as the red gold of South Africa, and pork as a cherished staple in many South African households.
Classical Style Pinotage and Pork
At its core, classical Pinotage is medium to full-bodied, with flavours of ripe plum, cherry, spice, and a distinctive earthy undertone. Its tannic structure and smoky edge make it a natural pairing for pork’ s savoury character.
• Pork leg roast, with its meaty and slightly gamey depth, finds a fitting companion in classical Pinotage. The wine’ s tannins cut through the richness, while its red fruit lifts the savouriness.
• Pork ribs or rashers, glazed with barbecue sauce, pair well with Pinotage’ s smoky tones. The sweet-savoury interplay of sauce and wine creates a mouthwatering echo of flavour.
This style of Pinotage doesn’ t overpower; instead, it complements the richness of pork, creating harmony in every bite.
Cape Blends: Elevating the Pairing
Cape Blends, unique to South Africa, are red wines where Pinotage takes a leading role but shares the spotlight with Bordeaux varieties such as Cabernet Sauvignon, Merlot, or Shiraz. These wines highlight Pinotage’ s versatility: the structure of Cabernet, the richness of Merlot, and the spiciness of Shiraz enhance its fruitiness while softening its edges.
