between cultures, generations, and memory. As the son of Dutch and Irish parents raised in Brazil, his childhood was filled with diverse flavors, but the most cherished meals were those shared at his grandparents’ home in Tecumseh, Ontario.
Each summer, Patrick’ s family would return to Canada for a month-long visit with his Oma and Opa. Gathered around a round smoked-glass table, they would indulge in Dutch comfort foods while National Geographic played softly in the background. The meals were simple, but sacred. Pan-fried pork chops with gravy made from the drippings; Dutch salad with egg, onion, and ham; sugar-dusted Pannenkoeken rolled and devoured with delight; pickled herring; and Hagelslag sandwiches layered with butter and chocolate sprinkles.
“ Food brings people together and tells a story of heritage,” Patrick shares.“ That’ s why it will always be a way to celebrate family and life.”
For Nathan, National Director of Resort Management, the kitchen was the heart of his Kentucky upbringing. His grandmother, affectionately known as Nannie, was a legend in the family for her handwritten book of recipes, each one tied to a cherished memory. From summer vacations to holiday mornings, food was the thread that stitched generations together.
“ My personal favorite was her Chocolate Chess Pie, though in our house, it’ s always been‘ Nat’ s Chocolate Pie,’” Nathan recalls.“ And every Christmas morning, my mom had sausage balls in the oven before we even saw what Santa brought.”
One dish, Eisenhour Delight, sparked playful debates among the cousins— some loved it, others didn’ t, and for significant others, trying it was practically a rite of passage in the family. Before Nannie passed, she gifted each grandchild a red recipe box filled with over 50 family recipes, a legacy now carried forward in Nathan’ s Florida home, where his daughters are learning their favorites.
“ I’ m so grateful for the memories, the laughs, and the sense of home those recipes represent,” he shares.“ They’ re our family’ s roots, and now they’ re part of our daughters’ story too.”
These personal connections reminded us that food isn’ t just nourishment; it’ s memory, meaning, and love passed from one generation to the next.
As Origins rolls out across Esplanade communities, members will be invited to share a recipe that holds personal significance. Maybe it’ s a grandmother’ s Sunday sauce, an uncle’ s famous gumbo, or the dessert that always disappears first at family gatherings. Alongside each recipe, we’ re eager to hear the story behind it, where it came from, who it reminds you of, and why it matters.
To bring these memories to life, Culinary Fair events will be hosted where members can prepare and share their dishes with neighbors. These gatherings will be filled with flavor, fellowship, and the joy of discovering each other’ s family traditions through food.
