Choose from four routes : three that connect Vancouver to the Canadian Rockies towns of Banff , Lake Louise and Jasper in Western Canada and a fourth that explores the American Southwest between Denver , Colorado and Moab , Utah .
The onboard menus feature dishes that showcase the ingredients and flavors of each region , accompanied by a selection of local wines and beers , along with premium spirits . “ I ’ m inspired by food memories , the land and the people who call it home ,” said Executive Chef Kaelhub Cudmore . “ The vision for the menu was defined by the places and communities the train travels through , so I ’ ve focused on local products and flavors that highlight the stories and people that reside throughout our journeys . Sourcing ingredients locally and supporting local suppliers and artisans was central to the menu creation .”
Canadian route highlights include Lois Lake steelhead salad , Alberta beef short rib , sweet corn and kale gnocchi and lemon lavender posset with Earl Grey macaron for dessert .
Dishes featured on the American Southwest route include pastries from
Sweet Coloradough , a local shop in Glenwood Springs , lemon and herb-roasted chicken breast with peach demi-glace ( made from Colorado peaches , of course ) and a superfood salad using salmon locally smoked in Denver less than four miles from where guests board the train .
