Happy Holidays! Hmmm… what to do with leftover turkey - so many options. I don’t know about you but I love making organic turkey pot pie. I use the lovely white bowls you see in the photo here. Ramekins are great for pot pies and can withstand high heat. Williams Sonoma and Sur La Table have different size ramekins perfect for pot pies.

FYI, before I share my recipe I have to tell you I am a picky puff pastry gal! I have tried different puff pastry dough from the supermarket and found them sadly lacking. I recommend All-Butter Puff Pastry. Wow, what a difference. You can find pastry made with butter in culinary stores. Well worth the effort... trust me!

I grew up eating chicken and turkey pot pies. My grandfather used to have a cotton, chicken and turkey farm in Northern California. Those baby chicks were the cutest

things I had ever seen and the turkeys scared the life out of me! My Grandfather had a room with the most beautiful pool table I had ever seen. This room was his pride and joy so he kept it locked, but when we kids arrived he happily took us into the room and taught us how to play pool. I am no pool shark, but I did learn a few tricks!

I don’t think I will hear any argument that pot pies are a treat, don’t you agree? My mouth waters just thinking about it. Here goes!
