Balsamic Kale Salad

This salad is so simple,yet so colorful and festive it’s a go-to whenever I host a gathering, and it is PACKED with nutrients and fiber.

The balsamic reduction infuses it with a tangy and sweet flavor.

Directions:

Steam a large bunch of kale for five minutes and arrange on a large plate.

Peel and slice a red onion and sauté in olive oil until browned.

Arrange onion in a circle around the kale.

Slice strawberries and oranges and arrange on top of the kale.

Dress with balsamic reduction:

Cook 1/2 a cup of good quality balsamic vinegar until it reduces by half.

Drizzle on salad.
