As mentioned earlier , ACV is made from fermentation of apples . Garden of Life only uses organic apples : we chop them up , steep them in water , then add specific yeast to ferment the apples to alcohol , just like making apple cider . We then use a specific bacteria called acetobacter to convert all the alcohol into vinegar . This vinegar consists of several organic acids , but mostly acetic acid . Our acetic acid is at a 5 % concentration , which is important for it to provide the desired benefits .
Many people ask what “ with the mother ” means when buying ACV , so here is what you need to know . The term “ mother ” refers to the SCOBY ( symbiotic culture of bacteria and yeast ) used in the fermentation process . These SCOBY cultures produce a host of beneficial compounds , the main one being acetic acid .
