WEEKNIGHT THAI TURKEY FLATBREAD
1 300g package flatbread
1-1/2 cups turkey breast, cooked, cubed
1/3 cup roasted red peppers
1/4 cup green onion, sliced
1 cup mozzarella cheese, shredded
THAI PEANUT SAUCE
1/2 cup water
1/3 cup all-natural peanut butter
2 Tbsp soy sauce
1 Tbsp lime juice
1 tsp minced ginger
1 tsp minced garlic
1 tsp brown sugar
1tsp Sriracha Sauce (optional)
Preheat oven to 425ºF.
To make THAI PEANUT SAUCE: Blend all ingredients together in
a blender until smooth. Add more water if needed to get a
spreadable consistency.
Place flatbread on a baking sheet. Spread with peanut sauce,
reserving a third for dipping later. Top with turkey, red peppers,
green onions and cheese. Bake 8 to 10 minutes until crust is
golden. Serves 6.
