ALLISON DAY started her plant-based, whole-foods blog Clean Wellness in 2012 during nutrition school, focusing on fresh, seasonal ingredients, turning them into healthy and mouthwatering recipes that all diets can enjoy. Along with being mostly plant-based, many of the recipes on my blog are gluten-free, as I’ve been cooking this way for over a decade after my sister’s celiac disease diagnosis. As well as being the nutritionist, recipe creator, designer, and voice behind the blog, Allison is the food stylist and photographer. In her non-blogging life, she works as a food writer, recipe developer, and consulting nutritionist for other writers. Allison hopes to show readers that healthy eating can be delectable and accessible with her kitchen creations on Clean Wellness. Regardless of dietary label, as long as you’re interested in increasing your consumption of whole-foods, you’ll find a recipe that appeals to you the only requirement is a healthy appetite! 66 WWW.EATINEATOUT.CA Revitalizing Raw Raspberry Cheesecake (Vegan, Gluten-free) CRUST: ½ cup raw hazelnuts ½ cup medjool dates, pitted (about 8) ½ tsp cinnamon pinch of sea salt FILLING: 2 cups raw, unsalted cashews, soaked for at least 4-24 hours, drained and rinsed 2/3 cup coconut oil, melted 2 tsp pure vanilla extract ½ cup agave Pinch of sea salt ½ cup raspberries (fresh or frozen, unsweetened)
