The Golden Egg becomes an ‘Oven’ by using the indirect grilling config-
uration. This is where you will need a plate setter configuration. The plate
setter blocks the direct heat emitted by the burning charcoal to create
even heat distribution. The heat is then transmitted to the meat indirectly in
a hot convection oven.
It is recommended that you place the plate setter configuration when the
Golden Egg has been preheated close to the cooking temperature in order
to achieve a much shorter preheating time.
To give your meat a delicious smoky flavour, it is recommended that a drip
pan is placed on the plate setter. Otherwise, to catch the drippings, place
the drip pan on the lower level of the of the multi-level grill.
To achieve even cooking, your roast should always be placed in the
center of the grill. This is because when using the indirect cooking
configuration the outer temperatures of the grill will be much higher
than the center of the grill.
