THE SUNSHINE CAFE n a recent Sunday, I wanted to stay close to home so we decided to go to the Sunshine Cafean eatery that I’ve always wanted to try but never have for some reason. It did not disappoint. The menu is jam-packed with break- fast and lunch options. I opted to get the Atkins Special; an omelet with the choice of bacon, ham, or sausage. I chose bacon and asked for cheese to be added. Tony went with the Sunshine Breakfast Special; two eggs, bacon, toast, home fries, and coffee. The special of the day was apple-stuffed french toast, and we decided to get that too. Everything was good! My omelet was a nice size, nearly half the size of the plate. It was cooked perfectly with bacon in every bite. Tony’s plate was overflow- ing with home fries, eggs, and bacon. The home fries were cooked perfectly: big pieces of potato slightly crisp on the edges and soft in the middle. He didn’t make a sound, which is how I knew it was a great meal.  The French toast stuffed with apples was wonderful. The apples were soft, lightly sweetened, and sprinkled with O cinnamon. There were two thick pieces of French toast that held the warm apples in the middle. The apples, which the owner later confirmed had been cooked fresh, were amazing. They had their own sweet syrup that was the perfect consistency for the french toast. The bread soaked it up nicely and there was no need for ma- ple syrup. So good! The price was great too. We got three meals for about $24. You can’t beat that. Of course, we also scoped out what we plan on getting during our next visit. For Tony, it will be the eggplant sandwich, and for me, the Diva Chicken Spinach Salad, followed by some Mexican fried ice cream. Sitting down and having a nice meal is always enjoyable, but it’s even better when you get to do it with someone who really loves and appreciates the effort going into each and every menu item.
