MORNING MAPLE MUFFINS
HOLIDAY UPSIDE DOWN CAKE
INGREDIENTS:
• 2 cups all-purpose flour
• 1/2 cup packed brown sugar
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1 stick butter, melted
• 3/4 cup milk
• 1/2 cup maple syrup
• 1 egg
• 1 teaspoon vanilla extract
Streusel Topping
• 3 tablespoons all-purpose flour
• 3 tablespoons brown sugar
• 2 tablespoons chopped walnuts
• 1/2 teaspoon ground cinnamon
• 2 tablespoons butter
INGREDIENTS:
• 2/3 cup packed light brown sugar
• 4 tablespoons (1/2 stick) butter, melted
• 2 medium apples, peeled, cored and thinly sliced
• 1/2 cup fresh cranberries
• 1 (15.25-ounce) package yellow cake mix
• 1 cup water
• 1/4 cup vegetable oil
• 3 eggs
• 1 teaspoon ground cinnamon
• 1/2 teaspoon ground cloves
DIRECTIONS:
Preheat oven to 350 degrees F. Line 16 muffin cups with paper liners. In a large bowl, combine the 2 cups flour, 1/2 cup brown sugar, baking powder, and salt; mix well. In a medium bowl, whisk the melted butter, milk, syrup, egg, and vanilla. Add milk mixture to dry ingredients and mix just until combined. Do not over mix. Spoon batter evenly into muffin cup liners. In a small bowl, combine Streusel Topping ingredients; mix until crumbly. Sprinkle evenly over batter. Bake 18 to 22 minutes or until toothpick comes out clean. Let cool slightly, remove from pan, and let cool completely on a wire rack.
DIRECTIONS:
Preheat oven to 350 degrees F. Sprinkle brown sugar evenly over the bottom of two 8-inch round cake pans and pour butter evenly over sugar. In each pan, arrange apple slices in a single layer over sugar and arrange cranberries evenly around apple slices. In a large bowl, combine cake mix, water, oil, eggs, cinnamon, and cloves; beat until well combined. Evenly divide batter between the two pans and bake 30 to 33 minutes or until a toothpick inserted in center of each comes out clean. Let cakes cool 5 minutes. Loosen gently with knife and invert onto 2 platters. Serve warm or allow to cool completely before serving.
