CURATED COCKTAILS
A collection of sophisticated cocktails — made with Japanese spirits and ultrapremium ice that ’ s imported from Japan — were launched earlier this year at SUSHI II , which has been recognized by the Michelin Guide . This is the restaurant ’ s first cocktail program and follows master chef Susumu Ii ’ s simple-yet-refined approach to the “ omakase ,” or chef ’ s choice , dishes . Available at least through summer , these cocktails highlight the craftsmanship of Japanese gin , whisky and fortified wine . Natsuko Travioli , the restaurant ’ s general manager and beverage director , developed the drink lineup to feature the artistry in Japanese culture , pairing perfectly with the eatery ’ s traditional Kansai-style menu and refined ambience . The ice comes from Kuramoto , a more-than-100-year-old , family-owned ice-making company in Kanazawa , Japan , which sources water from the Mount Haku springs , known for its naturally soft water . Served in elegant glassware , the cocktails include Ume Soda , which combines Choya plum wine , club soda and honey-fermented plum ; the Toki High Ball , made with Suntory whisky and club soda ; and Roku Tonic , with Roku gin served over a crystal clear ice cube that ’ s topped with a sprig of shiso flower to bring out the gin ’ s botanicals .
