One of my favourite and simplest recipes is a balsamic glaze made of 18 year old traditional balsamic vinegar . We use it on our Burratta bowl wherein we drizzle it over a bowl of Burratta , baby arugula , fresh Greenland tomatoes , Vancouver flake salt , housemade Parmesan crisp and finished also with the Arbequina extra virgin olive oil and flake salt .
