Let ’ s face it : we want to love veggies , but when they ’ re hitting our palates as either bitter or bland , it can be difficult . We toured the town and discovered how Peg City chefs build pleasing plates of greens , transforming lacklustre leaves into vibrant bites .
SHAKE THINGS UP
DARK , LEAFY GREENS inherently contain intensely bitter flavours . That ’ s where salt comes in . Not only does salt amplify sweet , sour and umami tastes , it also suppresses bitterness , making salt an essential element in a dish centred around ingredients like kale , cabbage or chard .
Kale ’ s tough texture and characteristic bitterness can be hard to tame , yet Clementine ’ s kale Caesar ( pictured left ) masterfully transforms this tricky green into a multi-dimensional flavour bomb . Parmesan shavings
