Grilled Chicken Ramen Bowl
Duck in to sample this hearty-yet-healthy soup on the second floor of the Legacy Lodge . Or better yet , make it yourself while gazing at the rocky peaks beyond your window .
INGREDIENTS
four , 3-oz portions dried ramen noodles
2 quarts chicken stock 2 tbsp sesame oil 3 tbsp minced garlic 3 tbsp minced mirin
3 tbsp low-sodium soy sauce 12 dried shiitake mushrooms 3 chicken breasts 2 jalapeños 2 hard boiled eggs 1 / 4 cup cilantro leaves
DIRECTIONS Add chicken stock to a large , heavy-bottom pot . Mix in sesame oil , minced garlic , mirin , soy sauce , shiitake mushrooms and bring to a boil . Grill , slice , and set aside the chicken breasts . Set aside . Slice jalapeños into thin rings , peel and halve hard boiled eggs , and chop cilantro . Set these aside . Cook ramen noodles in boiling water and drain . Divide the stock mix , chicken , jalapeños , eggs , cilantro , and noodles among individual bowls . Serve steaming hot , accompanied by a glass of Wasatch Brewery ’ s Ghostrider White IPA .
