CULINARY PHILOSOPHY
Chef Shriny describes his style
as one without borders, always
evolving and incorporating
international influences. He
believes great cuisine involves
two simple ingredients: top quality products
with flawless technique.
BACKGROUND Chef Shriny hails from
France. His love for the culinary field
has lead to 16 years of experience with
practical experience in both fine dining and
banquets. Chef Shriny previously served
as the Executive Chef of the Bollocks Pub
& Kitchen and oversaw the development
of the kitchen and menu of their second
location.
FIND HIM NOW In 2019, Chef Shriny took
over the reins of 12welve Bistro & Tapwerks
located in the Brock Street Brewing
Company building in downtown Whitby,
Ontario. Here he leads a team of 20 staff
and oversees a stunning menu with a focus
on local and sustainable ingredients, plant-
based foods, fresh seafood, pasta and the
freshest of local and international meats.
