Grilled Pork Chops with
Roasted Butternut Squash and Apples
• 1/2 Cup dried cranberries
• 1 Small butternut squash
• 2 Organic Granny Smith Apples
• 2 Tablespoons organic maple syrup
• 2 Tablespoons olive oil
• 1/4 Teaspoon cayenne
• 1/4 Teaspoon cinnamon
• 1 Teaspoon black pepper
• 1 Teaspoon salt
• Handful of chopped walnuts
Soak dried cranberries in hot water. Peel and cube
butternut squash and cube apples leaving skin on.
Toss squash and apples in large bowl with organic
maple syrup and olive oil. Sprinkle cayenne,
cinnamon, black pepper and salt on squash and
apple mixture. Add chopped walnuts and the
cranberries after squeezing out water. When
thoroughly mixed and coated, roast at 375 degrees
for 20 minutes stirring one halfway through.
Grill or broil pork loin chops as you desire.
