Superfood Salad with Wild-Caught Salmon • • • • • • • • • Tablespoon fresh grated ginger 1 small garlic clove crushed and minced A large handful of curly parsley chopped 1 large carrot shredded 1 cup of spiralized raw beet 4 cups fresh kale Juice of half a lemon 1-2 tablespoons hemp seed oil Dash of salt and pepper Combine garlic, ginger, lemon juice oil and seasonings. Toss veggies with dressing. Arrange grilled or broiled wild caught salmon on top.
