Cooking Classy in a Pinch ....
Harold and Miriam Moore Miriam and Harold Moore , from Rockwall , Texas , have been married for 31 years , and have four children and three grandchildren . Harold , a plumber by trade , enjoys making fabulous dinners for Miriam , playing guitar , wearing kilts , fly fishing and craft beer . Miriam enjoys singing with Harold and quilt making . After Miriam was diagnosed with diabetes in 2011 , she and Harold have strived to avoid eating processed foods , and have discovered a real love for fresh vegetables , natural and whole foods .
Chicken Sausage with Zucchini Noodles
Ingredients
• I package of chicken sausage with spinach ( Grilled or broiled then sliced .)
• 4 small or 2 large zucchini squash ( Use the linguine side of the special tool used to make zucchini noodles .)
• 6-8 sliced mini portabella mushrooms
• 1 sliced red bell pepper
• Half a white onion sliced
• 2 cloves chopped garlic
• Bunch asparagus cut up
• 3-4 pieces sundried tomatoes
• ¼ cup Kalamata olives
• 1 tablespoon capers
• ½ jar of your favorite marinara sauce
Directions Sauté the mini portabella mushrooms , add the red bell pepper , onion and garlic until everything begins to soften . Add asparagus pieces for a few minutes along with the sundried tomatoes , kalamata olives and capers . Add marinara sauce and mix everything together . Parboil zucchini noodles 1-2 minutes and strain with a mesh strainer . Transfer to serving dish or individual plates . Add sauce and vegetables to noodles and top with sausage and fresh grated Parmesan .
