Minestrone
Ingredients:
• 4 links Italian sausage, removed from casing
and browned with 1/2 cup onion and 2 large
cloves garlic.
• 32 ounces organic chicken bone broth
• 1 cup chopped fresh carrots
• 1 cup chopped celery
• 1 cup torn kale
• 3-4 chopped baby Bella mushrooms
• 1 chopped red bell pepper
• 1 sliced zucchini
• 1 can cannelloni beans
• 1/2 cup washed and rinsed quinoa
Fresh or dried basil and oregano
• Salt and pepper to taste
Add all ingredients except zucchini and fresh
basil and oregano into a large stockpot and
bring to boil. Reduce heat and simmer until
carrots are cooked thoroughly. Add zucchi-
ni and fresh herbs and cook another minute.
Serve into a large bowl.
