Winner of Masterchef Malaysia Season 1 STEAMED FISH WITH GREEN SAUCE INGREDIENTS: • • • • • • • • • • 1 siakap fish (seabass) or patin 5 stalks spring onions 4 cloves garlic 1cm ginger 1 bunch coriander root and stem Water as needed Salt to taste Sugar to taste White pepper to taste Oil SERVES 4 DIRECT IONS: 1. Score the fish. 2. In a blender, blend spring on ions, garlic, ginger, and coriander with a little bit of water. 3. Fry the blended ingredients in a little oil for about 4 minutes until fragrant. Season with salt, sugar and white pepp er. 4. Pour on top of the fish. 5 . Steam for about 20 minutes . 49
