My life these days,
is about foods that are easy
to make, taste amazing and
are good for my health. I am
on a mission to be as strong,
healthy and fit as I can be.
Over the past few
months, I’ve lost about 20
pounds, which by itself is a
feat. But, the impetus came
because my cholesterol was
ridiculously high — about
350. It had to come down,
and I wanted to try and bring
it down naturally.
I’ve tried to make sure I
was always satisfied with my
meals, and never hungry. I
ate lots of fruits and vegeta-
bles and less meat, wine and
chocolate. I gave nothing up,
but considered the calorie
counts of everything I added
to the fruits and vegetables,
like dressings and sauces and
oils. I only ate small portions
of meat, but did enjoy
Impossible Burgers when I
needed a burger.
I dropped my cholesterol
100 points. That is amazing
to me. It’s still high, but now
I know I can control it if I
watch my weight and what
I eat.
I try to find things to eat
that delight me. For a while
now, I’ve been trying to find
a way to enjoy pumpkin in
a low-fat dessert because

Michele DeLuca’s favorite new recipe for pumpkin cupcakes has only three ingredients..
I love pumpkin. I’ve tried
making pumpkin pie without
the crust, which was just
ok. I tried making pumpkin
pudding which was not good.
But then I found a recipe
on Pinterest which had two
ingredients, a 16-ounce can
of pumpkin and a Duncan
Hines spice cake mix. That’s
it. I stirred the pumpkin and
the cake mix in a bowl, added
about a half cup of apple
juice to make it a little less
thick, and made cupcakes.
They were amazing! Moist,
rich and decadent, for what I
figure amounts to about 100
calories. They are pictured
above.
That’s what this month’s
Delish magazine is mostly
about, ways to enjoy foods
that are simple, healthy and
delicious. And chocolate.
Because Valentine’s Day
is around the corner and
a good life for me requires
chocolates.
