Step 10 Using the edge of the small rolling pin and foam mat, lightly thin out the edge of the petals. Place the petal draped over the apple tray to dry slightly.

Pour some pearl sugar into a shallow dish. Lightly moisten the bottom edge of each petal with the Bakers Bond, then dip the petal into pearl sugar. Shake off gently and place over the apple tray to shape and dry.
Prop tip: allow the petals to firm up slightly so they hold a nice shape but not become hard, otherwise they will break when sticking into position.
