Green Bean Shiraae
The nutty flavour of sesame seeds complements crisp beans
INGREDIENTS: 1 cup medium firm tofu 2 Tbsp white miso 2 Tbsp mirin 2 Tbsp sugar 2 Tbsp soy sauce 2 Tbsp sake 1 tsp sesame oil 3 Tbsp roasted white sesame seeds 2 cups green beans 2 litres water 1 Tbsp salt
METHOD: 1. Crumble tofu into small pieces. 2. Combine tofu, white miso, mirin, sugar, soy sauce, sake, sesame oil and sesame seeds into bowl. Mix well and set aside. 2. Boil water, adding salt. Add green beans and cook for 2 minutes. 3. Drain and add into mixture. 4. Toss beans into mixture, and serve.
