What began as a food truck by brothers Michael and Jimmy Chidiac in 2019 is now the premier entertainment, beer and food destination in the central Black Hills.
Everyone entering the Prairie Dog is greeted by a guest ambassador who shows them around and explains how simple the self-serve taproom is. Patrons get a“ freedom” wristband and can choose from 28 unique beers, pouring as little or as much as they care to, allowing customers to move around the various spaces of the grounds, outside, inside, creekside or fireside. No wait, no worry, just great beer to sample or indulge in and a friction-free experience for every guest.
There are never lines or waits to get a beer, no matter how busy the bar is.
" It ' s just the way the system works. It’ s 100 people serving themselves at 28 different taps," Michael says. The domestic
beers are usually consistent at the taproom, but " we rotate out the sour and the cider almost weekly,” says Michael, creating a new drinking experience for people every time they visit The Prairie Dog.
The taproom is a great place for large groups.“ Twenty five girls showed up," Michael said, for a bachelorette party.“ In two and a half minutes they got their beer.”
Tastings are a breeze at The Prairie Dog since people can pour as little or as much as they want.“ You walk in here and taste as many as you want,” Michael says.“ This is like dating. Just get a little bit, a little bit and a little bit. Just date, date. And then when you find the one you want, say yes to the dress and pour the whole thing. You don’ t have to pour a whole glass.” He describes it as " having it your way, on your terms.” Ordering food is also a breeze, with a QR scan menu and“ grubs up” text, exchanging the small talk with servers for communal chats amongst friends, family or even strangers.
