When the fish was done and shredded, and the tostadas were crisp, Jeff began assembling all the ingredients – The fish was first to go on the tostada, and then a
generous quantity of the bright purple cabbage slaw, then the golden Pineapple Paradise, with dollops of crema and leafy microgreens. It was an eye-catching dish, bold and colorful, certainly, but it wasn’ t just pretty to look at. It was a fantastic mix of flavors and textures, with just the right amount of heat, and just the right amount of sweet. Meredeth was right – You don’ t realize you need Pineapple Paradise in your life until you’ ve tried it.
